Fiordilatte mozzarella in Apulia, was already produced in the Middle Ages. Pastoral and dairy activities were favored by the vast natural pastures and by the varieties of cows raised in the Apulian farms, and it began to work the milk, to produce this excellent dairy product. Apulian mozzarella has become an emblem specialty of a territory where breeding is flourishing and traditions are respected. The Ministry of Agricultural, Food and Forestry Policies has included Fiordilatte mozzarella, in the list of Traditional Agri-food Products of Apulia Region (PAT).
